Salads, while healthy and delicious, aren't exactly easy to eat at parties. Juggling a drink, a plate, forks, and loose salad leafs is a recipe for a mess!
However, this twist on the classic Caesar Salad recipe calls for skewering the ingredients - making it a cinch for eating on the go.
Ceasar Salad Skewers
Ingredients
Salad Dressing
1/2 cup mayonnaise
1 cup grated Parmigiano-Reggiano cheese
1/4 cup fresh lemon juice
1 2oz tin anchovies, drained
2 teaspoons Dijon mustard
2 teaspoons red wine vinegar
1 garlic clove
1/2 teaspoon Worcestershire sauce
Croutons
Baguette, cut into coins and halved
1/4 cup olive oil
Salt
Salad
1 bunch of Romaine lettuce, chopped or torn into 1 inch pieces
1 container of cherry tomatoes, halved
Pre-prepared chicken breast, sliced into 1 inch pieces
Directions
- Combine the salad dressing in a blender and blend on high for 20 seconds.
- Brush crouton pieces with olive oil and sprinkle with salt. Arrange on baking sheet and bake in the oven at 375C for approximately 5 minutes per side.
- Prepare skewers bottom to top: crouton, lettuce, chicken, lettuce, cherry tomato. Drizzle with salad dressing and sprinkle with parmesan.
